Think careful and diverse meat sourcing – 5-day-aged grain-fed Uruguay Chateaubriand and the UK’s Freedom Hills olive-fed Wagyu – to Scandi-influenced Citrus-cured cod ceviche with capers, smoked roe and herb oil.
